I was in need of an easy weeknight dinner. I made this recipe and I have to tell you it’s going to be a permanent addition to your collection. Easy, Tasty and fast to make. You will be eating a healthy meal in no time flat. This meal made enough for two. Be sure to double or triple if you are feeding more people.
Let’s start cooking…
Large Chicken Breast (boneless & skinless), Broccoli Florets, Soy Sauce, Rice Vinegar, Corn Starch, Vegetable Oil, Water, Brown Sugar and Garlic.
Mix the Sauce Ingredients and set aside.
Cut the Chicken Breast into bite sized pieces. Set aside in the fridge.
Blanch (boil) Broccoli for 3 minutes.
Remove broccoli to an ice bath to stop the cooking process. Set Aside.
Heat oil in a medium sized frying pan and add the chicken pieces.
Keep cooking until almost fully cooked inside.
Drain the broccoli and add it to the pan. Give it a stir and then add the sauce.
Give a stir to combine everything. Cook for another few minutes stirring regularly.
Taste and see if you need to add more brown sugar. I added one more tablespoon. Perfect-o!
