Mexican Sweet Potato with Cashew Sour Cream

With all the festive eating I indulged in over Christmas, it was time for something extra healthy.  I  had a craving for sweet potatoes and this vegan recipe delivered!  It was so delicious and kept my stomach satisfied all evening.  No urge to snack afterwards. Brazilian Black Bean & Cilantro Soup

One summer day I was in Whole Foods in Oakville.  A woman was giving away samples of this Brazilian soup she made.  It was such a great soup for summer.  I imagine you could easily eat it hot or at room temperature.  Anyway, I asked her what was in it.  I jotted down all the ingredients, went home and figured it out.  This soup has a strong cilantro flavor.  You can easily cut back on the cilantro to what suits your taste.
