Lazy Lasagna Soup

Folks, it doesn’t get much easier (or should I say lazier) than this.  Literally, all of the ingredients go into a soup pot right from the start.  This would be a great recipe to teach your kids how to make on their own.  Keep the greens aside and add at the very end just prior to serving.  This is very tasty soup, yet the flavor is not as intense as you might think it would be.   Total comfort food at its best.  Keep this soup vegan or garnish with some grated parmesan cheese to bring it up to the next level.

Ingredients: Pasta Sauce (your choice), Vegetable Broth, Chopped Veggies, Lasagna Noodles, and Lentils.

You’ll also need 2 cups of chopped Greens.

Add the Pasta Sauce to the pot.

In goes the Vegetable Broth.

Add the Chopped Veggies and Lentils.

Break up the Lasagna Noodles and add them to the pot.  Give a good stir, cover and bring to a boil. Reduce heat to a simmer and cook covered for 30-35 minutes.

When the soup is cooked through, add the Chopped Greens.

Stir the soup to wilt the greens.  The soup is ready to serve.

Garnish with grated Parmesan Cheese if desired.

Ingredients
  • 1 jar Pasta Sauce (your choice, approx. 3 cups)
  • 4 cups Vegetable Broth
  • ½ cup Brown or Green Lentils, dry
  • 4 cups Raw Vegetables, chopped (I used Zucchini, Mushrooms and Red Peppers)
  • 7-8 Dry Lasagna Noodles, your choice, broken up (I used Kamut grain noodles)
  • 2 cups Raw Greens, chopped (I used a mix of Kale, Spinach and Swiss Chard)
  • Parmesan Cheese, grated (optional)
Instructions
  1. In a medium sized soup pot add the Pasta Sauce, Vegetable Broth, Lentils, Raw Chopped Veggies, and Broken Lasagna Noodles.
  2. Stir and bring to a boil. Reduce heat to a simmer and cook covered for 30-35 minutes stirring occasionally.
  3. When the soup is cooked through, stir in the Chopped Greens until wilted.
  4. Garnish each serving with grated Parmesan Cheese if desired.
