Rice Krispies Squares – perfected

I know what you’re probably thinking…why am I posting Rice Krispies Squares?  We have all made them countless times and if I had a nickel for every RKS that I have eaten in my life well, you know the rest of the story.  I decided to post RKS because the original recipe isn’t that great (for two reasons): 1) They don’t use enough marshmallows and  2) They use a 9×13″ pan.   This said, you will get a flat and dry RKS.  I think the vast majority of us want a RKS that we can really sink our teeth into without having to wedge it sideways into our mouths and biting it with our molars.  I have now cracked the code on the perfect RKS by adding more marshmallows (60 to be exact) and using a smaller pan.  But please, don’t take my word for it, just make them and you will understand.  I promise. Chili Macaroni n’ Cheese

Winter is my favourite season — hands down.   I will take the coldest winter day over the hottest summer day, any day of the year.  To me, cooking in the winter is FAR more enjoyable than in the summer.  Chili Macaroni n’ Cheese is a vegetarian pantry recipe that you can whip up in no time.  So good and comforting on a “winter day”.  Lots of beans to bring up the fiber count and keep you filled up! The only non-pantry ingredients are: Onion, Garlic, and Cheddar Cheese.  Serve with a fresh garden salad.  For a fast week night or an easy weekend meal you can’t go wrong with this one! Fool Proof Squash Soup

This Squash Soup recipe is an easy and basic recipe that is VERY forgiving.  Very low in calories and fat, not to mention satisfying. You don’t need exact measurements of any of the ingredients really.  However, I do give you the exact measurements of what I did with this soup.  If your soup is too thick, add more broth and salt to taste. You can easy personalize this soup by adding in a sprinkle or two of cinnamon. A pinch of cardamom or curry powder will also give a little kick. A little bit of cream to garnish is also a good option.  We garnished our soup tonight with chopped green onions.   The possibilities are endless.  Keep the flavour as mild or bold as you prefer.  Another idea is to serve this soup mild and have your family/guests add the seasonings and garnishes they prefer. Chocolate Overload Fudgy Brownies

If there’s one thing I love about blogging it’s that I can post whatever type of recipe I want without someone telling me otherwise.  Here is yet another brownie recipe that I have made countless times.  Out of the oven they might not look like anything special but once you try one, I’m sure you’ll be sold!  I have modified the ingredients and method from the original recipe to tweak it just to my liking.  Super chocolaty, fudgy and ever so slightly gooey. You might think these brownies are not fully cooked through but they are! On top of an ice cream sundae or just pop them in your mouth…don’t expect these little gems to last long.  Continue reading

Mexican Sweet Potato with Cashew Sour Cream

With all the festive eating I indulged in over Christmas, it was time for something extra healthy.  I  had a craving for sweet potatoes and this vegan recipe delivered!  It was so delicious and kept my stomach satisfied all evening.  No urge to snack afterwards.
