Chocolate Pecan Pie

I have made this Chocolate Pecan Pie on many occasions.  I now feel that I have tweaked my Pie Crust method enough to make it as easy for you as possible.  Some people run away from baking pie crust from scratch.  I will gently guide you through a perfect crust that is an absolute winner.  With Thanksgiving Day (Canada) coming up in next month, this pie will be the crown jewel to your feast!  Serve chilled with whipped cream or vanilla ice cream.  This pie freezes very well.  Wrap up cooled pies with 2 layers of plastic wrap prior to freezing.  This crust recipe suits both sweet and savory pies or tarts.

This Pie Crust recipe technically makes dough for 4 pie crusts.  The Filling makes enough for 2 pies.  When I make this crust recipe, I divide the dough for 3 pie crusts just because I like a beefy crust around the edge (as you can see).  You can decide if you prefer a regular or beefier crust. Notice my rustic crust edge.  You don’t have to make it fancy perfect.  Do what you can.

One more note with the crust…you have the option of making the crust completely by hand or with the help of a Stand Mixer.  I started with the hand method and I finished it off with the Stand Mixer.  If you don’t have a stand mixer it’s not a problem. Pizza Baguette

Today I made Pizza Baguettes for lunch.   They’re a nice alternative to the regular pizza crust. Breaded & Baked Chicken Strips with Honey Mustard Dip

I found this recipe a couple weeks ago and I have to say that it’s quite tasty and different from my usual weeknight chicken dishes.  I have modified the original recipe somewhat to make the flavour just a little less intense. Since the chicken strips are not deep fried, it’s super crunchy like my Chicken Sesame recipe but it still has a very nice golden crust with juicy chicken on the inside.  This recipe is sure to please!  Pretty easy to make and only 15 -17 minutes of baking time.  Go a head and make it! Zucchini Pizza Boats

Recently, I saw a photo of Zucchini Pizza Boats that a co-worker showed me.  I immediately said, “I have got to post that recipe”.  I didn’t even know what the recipe was but I pretty much figured it out.  It’s really quite self explanatory just by looking at it.  With a bumper crop of Zucchini this summer coming at me from every direction, I kept making these over and over.  So good, fresh and very tasty!  Add your favourite pizza toppings to customize to your taste.  Zucchini never tasted so good!  Give them a try!
