Pizza Roll-Ups

I needed to make a savory type of “finger food” for an event and these Pizza Roll-Ups were a hit!  The dough is made from scratch and is very easy to make.  I made this recipe with just cheese and pepperoni. Meatloaf Burgers

Meatloaf reminds me of man-food and these little gems are no exception. This recipe was originally a regular meatloaf recipe.  I decided to switch things up a bit and make the meatloaf into burgers. They bake up faster without compromising on flavour or juiciness. I found them easier to freeze the leftovers (portion size) as well.  If you wish, you can make the recipe as a traditional meatloaf and bake it in a loaf pan for one hour.  I served up the burgers with my Parmesan Garlic Potato Wedges. Oven Roast Leg of Lamb

For me, lamb is a treat.  Sometimes when you order it in a restaurant it can be a pricy meal.  And then there are those people who shy away from cooking lamb.  This recipe is SO easy and delicious, there is no excuse not to cook it.  Before I go any further with this recipe, I need to say that once the meat is prepared and marinated, it will need to be refrigerated for 24-48 hours prior to cooking.  So keep this in mind if you wish to make it.  Left overs can be frozen if needed. Beef Stroganoff

I was going through my recipe collection and found my Beef Stroganoff recipe.  It has been years since I have made it and I asked myself, “why the wait”?  This is a classic old school meal that deserves a lot more attention.  It tasted so good. Everyone loved it and bowls were scraped clean.  Add the fact that every mouthful was pure comfort.  Serve with a side salad to up your veggie intake.  This recipe will definitely be on my fall & winter menu rotation. The Killer Club Sandwich

I’m putting my vegan summer on pause for this (meaty) Killer Club Sandwich blog post.   I made the sandwich for someone else and this is about the third time that I have made it.  I took all the pics and decided that it oh so needed to be posted.  As with almost all of my recipes, I switched a few things around from the original recipe and did some tweaking — only to make it tastier!  Your mouth will be bursting with flavour overload!  So satisfying.  If you zone-out while eating it, I will completely understand.  Maybe it’s best to eat it alone…Lol!

Make sure that you have all of your ingredients at the “ready” when you are about to assemble your sandwich.  Hopefully you will have some toothpicks to hold it together when you cut it up.  To share or not to share…that is the question! Continue reading

Beef Taco Rice Bowl (slow cooker)

I love my slow cooker and I’m sure I must have mentioned it before.  For me, there’s nothing better than coming home from work and smelling dinner.  Aside from preparing a few toppings, all I pretty much have to do when I get home is scoop n’ serve!  Hopefully you have a slow cooker for this recipe.  If not, it’s almost worth going out to buy one (or borrow).  This Beef and Taco Bowl is delicious!  So easy to throw together in the morning before you head out.  You can easily cook up the rice the night before and just heat it up the next day when you get home. Loaded Taco Casserole

It’s the weekend…Yay!  I wanted to make something special for my husband (man-food to be exact) and this recipe did not disappoint him in any way.  It was delicious with two manly “Thumbs Up!”  Man-food aside, anyone in search of comfort food would be all over this dish!

As I was putting this casserole together, I was concerned that my 2 quart dish was going to be too small but it all just fit.  Out of the oven and on our plates the flavour was Taco-tastic!  I served it with tortilla chips and a dollop of sour cream on top.

You can choose your level of heat by using spicier salsa if desired.

This recipe would go over very well at a pot luck.. You may need to double the recipe if you’re feeding a large crowd.  I couldn’t imagine there being any left overs.  Continue reading

Pizza Baguette

Today I made Pizza Baguettes for lunch.   They’re a nice alternative to the regular pizza crust.
