I love squash. And pizza. Moving right along on with my Vegan Summer, this fusion of the two made one tasty and incredibly healthy dish! The combination of the salty green olives and the sweet fresh pineapple was nothing short of amazing. I’m not a fan of vegan soy cheese so I sprinkled soy-free Vegan Parmesan Cheese on top, compliments of The Minimalist Baker. Sheer genius on their part. If there’s one type of food I can never get enough of, it’s anything that calls to the name of Taco or Burrito. Always so delicious and comforting. I think I could eat it every day. As part of my Vegan Summer 2016, this meal is no exception. The main event in this recipe is the Lentil Taco mixture. In this variation made it into a salad bowl but you can also use it for burritos or tacos. Non-vegans can add grated cheese and sour cream.
Note: When I started cooking the Taco Lentil mixture, it came to mind that I could have easily put all of the ingredients into my slow cooker instead of doing it stove top. The recipe below is for stove top. Next time, I will definitely give it a whirl in my slow cooker (6-8 hours on low). Continue reading
Falafels. Love them or (not love them). I don’t want to say “hate them” even though I know that some people do. I guess it’s just like anything else. However, if you DO love falafels, this recipe will have you hooked on making your own. My only suggestion is that you use a deep fryer. I know, I know…how many people out there have a deep fryer? Not everyone…it’s just like Ice Cream Makers. Alternately, you can heat a pot of cooking oil on your stove top and use a thermometer (if you’re comfortable with that method). Pan frying or baking falafels just isn’t the same. I always double this recipe and freeze the left overs (portion sized = 3 falafels).
Eat the falafels in a pita with your favourite toppings. Lettuce, Tomatoes, Hummus, Tzatziki Sauce, Tabbouleh are common for falafels. Continue reading
With all the festive eating I indulged in over Christmas, it was time for something extra healthy. I had a craving for sweet potatoes and this vegan recipe delivered! It was so delicious and kept my stomach satisfied all evening. No urge to snack afterwards. I took the left overs to work for my lunch the next day. The Cashew Sour Cream pulls this meal together. Tonight, I really did not feel like making anything for dinner. I was hungry but not starving. I saw the tortilla wraps on my kitchen counter and wondered if I had the ingredients to make “cheater pizzas” with them. The “cheater” part is using the wraps. If you like thin crust, I think you will enjoy this pizza! Once I found the pizza sauce in my cupboard, I knew I could come up with something and sure enough I did. Of course you can choose the pizza toppings you like. I searched through my fridge to see what topping ingredients I could find. One of these pizzas was just enough to hit the spot. Continue reading
I went to my local Farmer’s Market this morning after walking around all I felt like eating was fresh and crunchy vegetables. After making a few purchases, I came right home and made a couple of these wraps packed with veggies. So Good! Recently, I saw a photo of Zucchini Pizza Boats that a co-worker showed me. I immediately said, “I have got to post that recipe”. I didn’t even know what the recipe was but I pretty much figured it out. It’s really quite self explanatory just by looking at it. With a bumper crop of Zucchini this summer coming at me from every direction, I kept making these over and over. So good, fresh and very tasty!
