Lazy Lasagna Soup

Folks, it doesn’t get much easier (or should I say lazier) than this.  Literally, all of the ingredients go into a soup pot right from the start.  This would be a great recipe to teach your kids how to make on their own.  Keep the greens aside and add at the very end just prior to serving.  This is very tasty soup, yet the flavor is not as intense as you might think it would be.   Total comfort food at its best.  Keep this soup vegan or garnish with some grated parmesan cheese to bring it up to the next level.

10 Vegetable Soup

After looking over several healthy vegetable soup recipes, it was time to get organized.  I made a list of all the veggies I wanted in my vegetable soup and decided that I would use one cup of each vegetable.  I chose my favourite vegetables for the soup and you can do the same with your soup as this is a very forgiving recipe!  The same goes for any herbs and spices that appeal to you as well.  I would have added more types of vegetables but they were out of season (I suppose I could have used frozen but I really wanted to use fresh). Having said this, my corn was frozen. If you need more veggies in your diet, here is a way to get them in you.  Also, I didn’t cook my soup to death as I like my vegetables with a slight crunch to them.  Once the soup was fully combined with all the ingredients, I simmered it for 10 -15 minutes.  Be sure to simmer for longer if  you desire softer vegetables. Fool Proof Squash Soup

This Squash Soup recipe is an easy and basic recipe that is VERY forgiving.  Very low in calories and fat, not to mention satisfying. You don’t need exact measurements of any of the ingredients really.  However, I do give you the exact measurements of what I did with this soup.  If your soup is too thick, add more broth and salt to taste. You can easy personalize this soup by adding in a sprinkle or two of cinnamon. A pinch of cardamom or curry powder will also give a little kick. A little bit of cream to garnish is also a good option.  We garnished our soup tonight with chopped green onions.   The possibilities are endless.  Keep the flavour as mild or bold as you prefer.  Another idea is to serve this soup mild and have your family/guests add the seasonings and garnishes they prefer. Mama’s Minestrone Soup

There’s no need to ever buy canned Minestrone Soup when you have this recipe. Tastes great and freezes well. So easy to make!  Optional: Keep it Gluten Free with GF Pasta. Freeze leftovers. Always nice to find a surprise in your freezer when you don’t feel like cooking!  Feel free to choose other veggies or beans you like for this soup. Just substitute the correct amounts. Chana Masala

Chana Masala

This recipe is very easy to make and it tastes so good. Definitely one of my favourites. It will warm you up on a cold winter night.  The photo here is not the greatest but until I have a better one, you have a good idea how it looks. The asparagus is not part of the recipe itself but a nice addition. Also,  this recipe need Garam Masala, a mixture of Indian spices.  I have also included a Garam Masala recipe in this blog. Brazilian Black Bean & Cilantro Soup

One summer day I was in Whole Foods in Oakville.  A woman was giving away samples of this Brazilian soup she made.  It was such a great soup for summer.  I imagine you could easily eat it hot or at room temperature.  Anyway, I asked her what was in it.  I jotted down all the ingredients, went home and figured it out.  This soup has a strong cilantro flavor.  You can easily cut back on the cilantro to what suits your taste.
