Oven Roast Leg of Lamb

For me, lamb is a treat.  Sometimes when you order it in a restaurant it can be a pricy meal.  And then there are those people who shy away from cooking lamb.  This recipe is SO easy and delicious, there is no excuse not to cook it.  Before I go any further with this recipe, I need to say that once the meat is prepared and marinated, it will need to be refrigerated for 24-48 hours prior to cooking.  So keep this in mind if you wish to make it.  Left overs can be frozen if needed. I love my slow cooker and I’m sure I must have mentioned it before.  For me, there’s nothing better than coming home from work and smelling dinner.  Aside from preparing a few toppings, all I pretty much have to do when I get home is scoop n’ serve!  Hopefully you have a slow cooker for this recipe.  If not, it’s almost worth going out to buy one (or borrow).  This Beef and Taco Bowl is delicious!  So easy to throw together in the morning before you head out.  You can easily cook up the rice the night before and just heat it up the next day when you get home. Loaded Taco Casserole

It’s the weekend…Yay!  I wanted to make something special for my husband (man-food to be exact) and this recipe did not disappoint him in any way.  It was delicious with two manly “Thumbs Up!”  Man-food aside, anyone in search of comfort food would be all over this dish!

As I was putting this casserole together, I was concerned that my 2 quart dish was going to be too small but it all just fit.  Out of the oven and on our plates the flavour was Taco-tastic!  I served it with tortilla chips and a dollop of sour cream on top.

You can choose your level of heat by using spicier salsa if desired.

This recipe would go over very well at a pot luck.. You may need to double the recipe if you’re feeding a large crowd.  I couldn’t imagine there being any left overs.  Continue reading

Slow Cooker Asian-Style Chicken

I love my slow cooker. LOVE IT!  I had 3 packs of chicken drumsticks in my freezer and all I wanted to do was thaw them, toss them in my slow cooker, spin on my heel and walk away.  Well, once I had all FIVE ingredients for this wonderful recipe in my slow cooker, I spun on my heel and took one step towards kitchen sink to wash the dishes.  So much for walking away.  But I sure walked away once the dishes were done.

This chicken recipe is very saucy, juicy and not to mention EASY!  Once cooked, the meat just falls off the bone.  Don’t feel you have to double the sauce because there is plenty.  Once in the slow cooker it’s ok if the chicken is not fully submerged in the liquid. It will cook up just fine. The flavour is somewhat mild but tasty!  It was a hit in my home. Serve with basmati rice and a veggie of your choice. Continue reading

Recently, I saw a photo of Zucchini Pizza Boats that a co-worker showed me.  I immediately said, “I have got to post that recipe”.  I didn’t even know what the recipe was but I pretty much figured it out.  It’s really quite self explanatory just by looking at it.  With a bumper crop of Zucchini this summer coming at me from every direction, I kept making these over and over.  So good, fresh and very tasty!  Add your favourite pizza toppings to customize to your taste.  Zucchini never tasted so good!  Give them a try! Chicken Chili

Chili is one of my favourite go to staple recipes.  Sometimes, when I don’t know what to make for dinner, I almost always have all the ingredients on hand to make Chili.  Satisfying and filling not to mention easy to make.   This recipe does not contain any real spicy heat.  You can easily add the level of heat you like with chili flakes, Tabasco Sauce, jalapeños, or other hot sauce of  your choice.  Or you can have your family or guests add their own level of heat suits them.  Serve with your favourite Nacho Tortilla Chips for a nice added crunch.
