This Squash Soup recipe is an easy and basic recipe that is VERY forgiving. Very low in calories and fat, not to mention satisfying. You don’t need exact measurements of any of the ingredients really. However, I do give you the exact measurements of what I did with this soup. If your soup is too thick, add more broth and salt to taste. You can easy personalize this soup by adding in a sprinkle or two of cinnamon. A pinch of cardamom or curry powder will also give a little kick. A little bit of cream to garnish is also a good option. We garnished our soup tonight with chopped green onions. The possibilities are endless. Keep the flavour as mild or bold as you prefer. Another idea is to serve this soup mild and have your family/guests add the seasonings and garnishes they prefer. This recipe is very easy to make and it tastes so good. Definitely one of my favourites. It will warm you up on a cold winter night. The photo here is not the greatest but until I have a better one, you have a good idea how it looks. The asparagus is not part of the recipe itself but a nice addition. One summer day I was in Whole Foods in Oakville. A woman was giving away samples of this Brazilian soup she made. It was such a great soup for summer. I imagine you could easily eat it hot or at room temperature. Anyway, I asked her what was in it. I jotted down all the ingredients, went home and figured it out.
